About this place
Watching smoke rise from the tabletop roaster, an evening at Eiyoro in Oimachi begins most naturally with the salt-seasoned cuts. The prime tongue and special salted skirt steak (harami) form the core of the opening round. The skirt steak balances savory salt with sweet, rendering fat, followed smoothly by salted liver, salted loin, and pleasantly chewy salted tripe, each highlighting the restaurant's seasoned salt marinade.
From there, the rhythm shifts easily to cuts coated in sweet-savory tare sauce, which draw out the richness of the beef and pair naturally with bowls of white rice or cold drinks. Well-marinated premium loin, short rib, and skirt steak develop deeper caramelized depth over the flame. The kitchen also provides a solid selection of offal, including small intestines, abomasum, and uterus, punctuated by plates of assorted kimchi, boiled tripe (senmai), and seasoned namul vegetables.
The dining room is modest in scale, arranged around roughly 2 tables and tatami floor spaces, and the staff generally ask diners to consolidate meat orders into 2 main rounds. Ordering a comprehensive mix of salt and tare cuts in the first round leaves room to reorder preferred favorites during the second. Because seating is limited and evening service fills up quickly, securing a reservation in advance is well advised.
